Nutrition in Disguise

Nutrition is important at every age, but often older adults aren’t getting the nutrients they need. This project is exploring strategies to add nutrient-rich ingredients to various recipes served in long-term care.

Project Description

The research team is using innovative strategies to increase the nutrient content of various recipes. The team is exploring a variety of nutrient-dense ingredients that are feasible for long-term care homes to purchase and use (for example, squash, black beans). These ingredients are then added to recipes to determine how much can be added without affecting the taste and texture of the product. By incorporating these ingredients into popular recipes (for example, banana bread), the result is a product with enhanced nutrition that older adults can enjoy. This project is taking place in the RIA Research Kitchen at the Centre of Excellence for Innovation in Aging.
